A Healthy New Year Bowl
Ingredients
Main Ingredients
- 100g soft tofu
- 1cm ginger (grated)
- 50g broccoli (steamed)
- 50g cauliflower (steamed)
- ½ zucchini (spiralized)
- ½ green apple (julienned)
- ½ cup cabbage
- A handful of rocket leaves (shredded)
- 1 spring onion (finely chopped)
- ½ long red chill (chopped)
- ¼ lime (to serve)
- Sesame seeds (to serve)
- Sunflower seeds (to serve)
Dressing
- 2 tbsp Obento Rice Wine Vinegar
- 1 tbsp LKK Soy Sauce
- 1 tsp honey
- 1 tsp LKK Sesame Oil
To Begin
Make the dressing by whisking the ingredients together in a small glass.
Grate the ginger and finely chop the small onion.
Heat a non-stick frying pan over medium heat. Cook the ginger and small onion in a little oil until softened, then add the tofu, continuing to cook while breaking down with the back of a spoon until it has browned.
Arrange the salad ingredients in a bowl. Top with cooked tofu, chilli, lime wedges and seeds. Serve with the dressing on the side. Serves 1.
